Blog: Happy Thanksgiving

It's Thanksgiving Day here in the States and I wanted to wish a happy holiday to everyone who celebrates (and a happy Thor's Day to everyone who doesn't). I'm spending the day doing editing, cooking, writing, and more editing. How are you planning to spend it?

I also wanted to share my quick-n-easy Turkey Day desert recipe which was given to me by a coworker. Pumpkin cake. Prep time: 5 minutes  Difficulty: Too Easy.

Preheat an oven to 350 degrees.

Mix 1 box of angel food cake with 1 can of pumpkin pie filling. Do NOT add any other ingredients.

Scrape mixture into 9 x 12 cake pan at least 2 inches high (remember angel food cake expands).

Cook for 35 minutes.

Don't add any other ingredients. Don't lick the spoon (this is one of those recipes that tastes awful raw but is excellent once cooked).

It because an excellent, rich, sweet desert that is low fat and low calorie compared to traditional Turkey Day deserts. I hope you enjoy. Drive safe, stay safe, and try not to let yourself get too distracted from your writing.
